Mandarin Salad

* Mandarin oranges are high in vitamin C and copper, while low in saturated fat, sodium and cholesterol. Mandarin oranges are excellent for people who want to lose weight and maintain optimal health.
Mandarin Salad

Ingredients:

  • 1 can mandarin oranges (drained).
  • 1 green iceberg lettuce.
  • 1 small head of red lettuce.
  • 1 cup chopped celery.
  • 2 green onions (chopped).
  • ½ tbsp salt.
  • 2 tbsp sugar.
  • ¼ cup salad oil.
  • ¼ cup toasted almonds (sliced).
  • ¼ tbsp tabasco sauce.
  • 2 tbsp tarragon vinegar

Directions:

Cut iceberg lettuce, red lettuce, celery, onions and almonds into bite size chunks. Mix everything together in a large bowl. Mix salt, sugar, salad oil, tabasco sauce and tarragon vinegar together. When you are ready to serve, pour over salad along with oranges and almonds. Refrigerate for half an hour.
